Chardonnay
Ried Hasel
The powerhouse among our ranks! The Strasser Hasel offers the best conditions for Burgundy varieties. Chalky loess soils, an ample water supply, and the south-facing direction ensures plenty of hours of sunshine. The full potential of the grape variety only becomes apparent after a few years of storage in the bottle.
The main Chardonnay harvest only takes place in mid-October, depending on the vegetation. The individual parcels for our sparkling wines have already been selected before this. Only when the grapes are physiologically ripe are they harvested. After gentle whole-cluster pressing, we fill our Chardonnay into 600-litre French oak barrels, in which it undergoes biological acid degradation following spontaneous fermentation.
