It’s a long time from the start of a vintage’s vegetation period to the filled bottle. During this time, it’s the interplay between people and nature that determines the quality of our wines. This is the only way for the winemaker’s unmistakable signature to be able to develop in the bottle. For us, one of the most important decisions is to only interfere with nature in a very limited and targeted way. Long exposure to yeast and the right choice of fermentation and storage casks contribute to how this signature manifests itself.
A well-considered selection of fruit wood, so as not to obstruct the channels for the vine’s sap, and maintaining species-rich vegetation that has a positive effect on the stock of useful plants, are among some of our most important ideas.
We completely refrain from using insecticides or herbicides. By composting the plant-based residues of the pressing and using manure, we manage to do without synthetically produced fertilisers.
